TESTED RECIPE ADAPTED FROM ANDREW KOW’S A TASTE OF HOME

Spicy Chicken with Honey

INGREDIENTS:

4 pcs                      drumstick

2                              egg white

3 tbsp                    tapioca flour

Adequate            coriander

5 tbsp                    water

Marinade:

Some                    salt

2 tbsp                    light soy sauce

½ tbsp                   ginger juice

½ tbsp                   cooking wine (hua diao wine)

Some                    sugar

Seasonings:

10                           dried chilli

2 tbsp                    light soy sauce

1 tbsp                    oyster sauce

4 tbsp                    honey

½ tbsp                   LP sauce

1 tbsp                    cooking wine (hua diao wine)

1 tbsp                    dark soy sauce

PREPARATION INSTRUCTIONS:

  1. Rinse drumsticks, cut into pieces. Rinse coriander, cut into sections.
  2. Cut dried chilli into sections, fry in heated oil until fragrant.
  3. Marinate drumstick with egg white, tapioca flour and marinade for 1 hour.
  4. Heat up oil in pot, fry drumsticks until golden brown, remove and drain.
  5. Fry dried chilli until fragrant, add in seasonings, water and chicken pieces. Thicken the gravy with tapioca flour and some water. Serve.
