Ingredients:
250g vegetarian lamb
1 no cinnamon stick
2 no cloves
1 no star anise
150 ml coconut milk (mixed with 100 ml water)
2 tbsp kurma powder
1 tbsp lime juice
2 tbsp cooking oil
1/2 tsp sugar
1/2 tsp salt
Spices (blended):
50g shallots
2 cloves garlic
1 thumb size ginger
Garnishing:
1 no tomato (cut into wedges)
1 no green chilli
1 spring Chinese celery (cut into sections)
Some fried shallots
Preparation Instructions:
1. Heat oil in a pot and stir-fry cinnamon stick, cloves and star anise. Add in the blended spices. Stir-fry until fragrant and oil seeps out.
2. Add vegetarian lamb and kurma powder. Stir-fry until well mixed.
3. Add coconut milk to cover vegetarian lamb pieces.
4. Bring to a boil, simmer for a while. Add tomatoes and green chilli. Stir-fry for a while. Season with lime juice, sugar and salt. Dish out, garnish with fried shallots and serve.
