TESTED RECIPE ADAPTED FROM PLILIP YOONG’S NYONYA DELI
8 dried chillies
3 red chillies
2 stalks lemongrass
2 tsp belacan powder
3 tbsp oil
500g medium size prawns, shelled and deveined
1 tbsp sugar
1 tsp salt
100g tamarind pulp, mixed with 250ml water and squeezed out juice
100ml coconut milk
1 small cucumber, sliced, marinated with 1 tbsp sugar for 10 minutes and drained
- Heat up wok, pour in sambal and stir-fry at medium low heat till fragrant.
- Add in prawns and mix well. Pour in seasoning and bring to boil. Add in coconut milk and bring to boil. Add in marinated cucumber, stir well and bring to boil. Taste.
- Serve hot with rice or nasi lemak.
