Tested Recipe Adapted from Plilip Yoong’s Nyonya Deli
1 cucumber, seeded and cut into strips
1 carrot, peeled and cut into strips
5 long beans, cut into 3cm lengths
100g cabbage, cut into pieces
3 red chillies, cut into pieces
3 green chillies, cut into pieces
150ml cold boiled water
150ml white rice vinegar
300g pineapple, cut into small pieces
12 dried chillies, soaked
3 red chillies
4 stalks lemongrass
100g dried prawns
5 tbsp oil
Salt to taste
3 tbsp toasted white sesame seeds
150g peanuts, toasted and chopped
- Bring a pot of water to boil. Put in A and blanch for 1 minute.
- Put all ingredients for B into a mixing bowl and stir till sugar has dissolved. Add in A, pineapple, mix well and soak for 2 hours (stir ocassionally).
- Heat up oil, saute all spices till fragrant. Remove from heat and leave to cool.
- Mix no. 2 and 3. Add salt to taste. Add in sesame seeds, peanuts and serve as appetizer.
