Roast Pork Dried Oyster Porridge

 

Ingredients:

½ cup uncooked rice

5 cups water

250g roast pork or trotter meat

½ tsp salt

1 tsp oil

5 dried oysters (soaked till soft)

1 salted egg (hard-boiled)

1 century egg

Garnishing:

1 tbsp shredded ginger

1 tbsp chopped spring onion

Preparation Instructions:

  1. Rinse rice, drain, and place in a pot. Mix in salt and oil, and set aside for 20 minutes.
  2. Add in water and dried oysters, and bring to a boil. Simmer for 20 minutes.
  3. Add in roast pork or trotter meat and boil for another 20 minutes.
  4. Peel and cut salted egg and century egg into cubes. Add them and mix well. Serve hot with garnishing.
