500g king oyster mushrooms, cleaned and cut into pieces
2 cups oil for deep-frying
2 tbsp sesame oil
8 slices ginger
1 tbsp sliced garlic
1 red chilli, seeded and cut into pieces
2 tbsp light soy sauce
1/2 tsp salt
1 tsp sugar
2 tbsp shaoxing wine
50g Thai basil leaves
1. Coat king oyster mushrooms with cornstarch and deep-fry in hot oil until golden brown. Dish and drain.
2. Leave 1 tbsp oil in wok, add sesame oil and sauté sliced ginger and garlic until fragrant. Add chilli, king oyster mushrooms and stir well.
3. Add seasoning and stir-fry over high heat until well mixed.
4. Lastly drizzle with shaoxing wine and mix in Thai basil leave. Dish up and serve.
