Tested Recipe Adapted from Eva Kam Mum’s Loving Dishes

Fried Tiger Prawns with Spicy Soybean Paste


300g large tiger prawns

1 tbsp chopped garlic

½ tbsp chopped shallot

1 tbsp shaoxing wine


1/8 tsp fine salt

Ground white pepper

1 tbsp corn starch


1 tbsp fish sauce

2 tsp light soy sauce

1 tbsp sugar

¾ tbsp spicy soybean paste with chopped garlic

2 tbsp water

Preparation Instructions:

  1. Trim head spikes and legs from tiger prawns. Devein. Cut open the shell at the abdomen, marinade the flesh with salt and ground white pepper. Mix with corn starch.
  2. Heat oil in a wok. Fry prawns over high heat until both sides are golden.
  3. Add chopped garlic and chopped shallot. Stir-fry until golden brown. Sprinkle wine and stir-fry. Add the sauce and bring to the boil. Cook until the sauce thickens. Serve.
