Vanilla Coconut Pancakes with Mango & Passionfruit

Ingredients:

2 mangoes (peeled and cut into quarters)

½ cup coconut milk

1 egg

½ tbsp honey

1 tsp vanilla extract

¾ cup all-purpose flour

1 tsp baking powder

¼ tsp salt

Pulp from 2 passionfruit

Preparation Instructions:

1. In a bowl, combine the milk, eggs, honey and vanilla. Add the flour, baking powder, salt and mix to form a smooth batter.

2. Cook pancakes in a non-stick pan sprayed with a little vegetable oil.

3. Serve immediately topped with sliced juicy mangoes and passionfruit.
