Deep-Fried Mushrooms with Wasabi Mayo

Ingredients A: (makes 4 portions)

200g fresh shiitake mushrooms

Some plain flour

200ml tempura batter

Ingredients B: (Wasabi Mayo)

4 tbsp mayonnaise

1 tsp wasabi paste

1 tsp condensed milk

Preparation Instructions:

  1. Combine ingredients B together and keep it chilled in the fridge until ready to use.
  2. Rinse and trim away the stalks of the shiitake mushrooms.
  3. Dust mushrooms with plain flour and dip into tempura batter, deep-fry till golden brown. Drain on paper towels.
  4. Serve with wasabi mayo.
