Dough:

1 ½ cup bread flour

½ tsp salt

1/8 tsp coarsely ground black pepper

1 tsp caster sugar

1 1/8 tsp instant dried yeast

½ cup full cream milk at room temperature

2 ½ tbsp unsalted butter (melted and divided: 2 tbsp to mix with the dough and ½ tbsp for brushing the rolls)

Filling:

¼ cup chopped onion

¾ cup (85g) shredded red cheddar cheese

1 tsp chopped fresh parsley

1/8 tsp salt

1/8 tsp coarsely ground black pepper
Preparation Instructions:

1. In a small bowl, add in full cream milk and instant dried yeast, stir to combine and leave aside for 5 minutes.

  1. In a mixing bowl, add in bread flour, salt, coarsely ground black pepper, caster sugar and melted unsalted butter. Stir to combine and create a well at the centre.
  2. Pour in the yeast mixture, knead into a rough dough.
  3. Transfer the dough onto a working surface, knead until smooth and elastic.
  4. Place the dough into the mixing bowl and leave at the cold oven for 1st round of proofing until doubled in size.
  5. Meanwhile, in a small bowl, stir together all of the ingredients for the filling. Grease a 9-inch round cake pan and line the base with parchment paper and set aside.
  6. Deflate the dough and transfer onto a working surface. Roll into a rectangle measuring 10×7-inches.
  7. Spread the filling evenly over the dough, leaving about ½-inch border at the edge.
  8. Starting with a short side, roll dough into a tight log.
  9. Cut the dough into 6 equal portions.
  10. Place the rolls into the prepared cake pan, spacing them out evenly.
  11. Transfer the cake pan into the cold oven for 2nd round of proofing until doubled in size.
  12. Remove the cake pan from the cold oven.
  13. Preheat the oven at 180C.
  14. Use a pastry brush, gently brush the remaining melted unsalted butter over the rolls.
  15. Bake at preheated oven at 180C for 30 minutes. Increase the heat to 200C and bake for 10 more minutes until light brown and the cheese bubbles.
  16. Serve warm!
