380g medium shrimps (shelled and deveined)
1 tsp potato starch
¼ tsp salt
1 ½ cup red seedless grapes
1 stick celery (trimmed and diced)
3 tbsp mayonnaise
Lemon zest from 1 lemon
1 tbsp lemon juice
1/8 tsp caster sugar
1/8 tsp salt
1/8 tsp coarsely ground black pepper
Some mixed lettuce
- Rub the potato starch and salt with the shrimp meat. Rinse with cold water, drained and set aside.
- Bring some water to a boil, add in shrimp meat and cook until turn pink. Use a slotted spoon to remove the shrimp meat and leave aside to cool completely.
- In a mixing bowl, add in celery, grapes, shrimp meat, mayonnaise, lemon zest, lemon juice, sugar, salt and coarsely ground black pepper. Gently toss to coat.
- To serve: place a bed of mixed lettuce on a serving bowl, top with the mayo shrimps salad with grapes and celery. Serve immediately.
