Hum Chin Peng (Chinese Fried Bread)

Tested Recipe with Slight Adjustment Adapted from Koh Sai Ngo’s The Best of Penang Street Food

Hum Chin Peng (Chinese Fried Bread) 

Ingredients A:

100g all-purpose flour

¾ tsp dried instant yeast

½ tbsp caster sugar

½ tsp alkaline water

100ml water

Ingredients B:

50g caster sugar

¼ tsp salt

½ tbsp cooking oil

½ tsp five-spice powder

½ tsp baking powder

140g all-purpose flour

Ingredients C:

¼ cup white sesame seeds

¼ cup water

Preparation Instructions:

  1. Mix all ingredients A until well combined and set aside overnight.
  2. The next morning, mix all-purpose flour and baking powder of Ingredients B until well combined. Add the remaining Ingredients B into the risen batter and mix well. Add flour mixture and knead well. Divide the dough equally into small portions, about 30g each, shape into ball and flatten it into a disc and arrange on a lined baking sheet and set aside to rest for 10 minutes.
  3. Use pastry brush to brush some water on top of the risen dough and sprinkle with some white sesame seeds.
  4. Heat up adequate cooking oil for deep-frying, deep-fry the dough in batches by place in the dough and deep-fry over medium low heat until golden brown. Remove, drained on paper towel to absorb excessive oil.
