Nasi Ayam Briyani (Briyani Chicken Rice)

Tested Recipe with Slight Adjustment Adapted from Koh Sai Ngo’s A Taste of Kampung

Nasi Ayam Briyani (Briyani Chicken Rice)

Ingredients A:

300g basmati rice, rinsed

500g chicken drumstick, cut into pieces

½ tsp turmeric powder

150ml evaporated milk

½ tsp salt

300ml water

4 tbsp light soy sauce

2 tbsp Planta (margarine)

Ingredients B:

1 star anise

3 inches cinnamon stick

5 cloves

4 pcs cardamoms

4 cloves garlic, peeled and chopped

4 shallots, peeled and chopped

2 tbsp chopped young ginger

Ingredients C:

50g gold raisins

50g dark raisins

120g frozen mixed vegetables

Preparation Instructions:

  1. Heat up 2 tbsp cooking oil, stir-fry Ingredients B until fragrant. Add Planta and the remaining Ingredients A (except evaporated milk), stir-fry well.
  2. Transfer all ingredients from step 1 into a steaming plate, add evaporated milk and place into a preheat steamer and steam until cooked.
  3. Add Ingredients C and stir well.
