6 slices x ¾-inch bara brith
2 large eggs
1 tbsp caster sugar
½ cup full cream milk
½ tsp pure vanilla extract
Unsalted butter, for frying
Maple syrup, for serving
- In a bowl, whisk together eggs, caster sugar, full cream milk and pure vanilla extract.
- Heat up an 8-inch non-stick skillet over low heat, then melt a small amount of unsalted butter.
- Dunk a slice of bara brith into the mixture so that it’s fully coated before putting it into the non-stick skillet.
- Allow the toast to cook on both sides until deep golden brown on the surface. Remove from the pan and repeat the process until use up all the ingredients.
- Serve with maple syrup.
