Sioh-Ge (Chicken Sioh)

Tested Recipe with Slight Adjustment Adapted from Peranakan Cuisine “Baba Nyonya Culture Dishes

Sioh-Ge (Chicken Sioh)

Ingredients A:

2 chicken whole legs (600g)

100g shallots (peeled and chopped)

180ml water

Ingredients B: (mix well)

100g tamarind paste

240ml water

Marinade:

1 tsp salt

½ tsp ground white pepper

Seasoning:

1 ½ tbsp coriander powder

1 tsp salted bean paste

1 tbsp dark soy sauce

½ tbsp sugar

½ tsp ground white pepper

Preparation Instructions:

  1. Rinse chicken legs, pat-dry, rub all over with the marinade, marinate for 2 hours in the refrigerator.
  2. In a wok, heat up 3 tbsp cooking oil, stir-fry shallot till fragrant over low heat. Add the marinated chicken legs and stir-fry for 10 minutes.
  3. Add water, bring to boil over high heat, add in seasoning and tamarind water, bring back to the boil.
  4. Cover the lid, reduce to medium heat, allow to simmer for around 25 minutes until chicken legs cooked and tender.
  5. Lastly, stirring constantly until the gravy is slightly thick. Dish out, serve hot.
