Sambal Ikan Bilis

Tested Recipe with Slight Adjustment Adapted from Peranakan Cuisine “Baba Nyonya Culture Dishes

Sambal Ikan Bilis 1

Ingredients A:

150g peeled ikan bilis

150g big onion (peeled and sliced)

100ml cooking oil

Ingredients B: (mix well)

50g tamarind paste

150ml water

Ingredients C: (pounded)

100g red shallots (peeled)

50g garlic (peeled)

1 tbsp toasted belacan

15g turmeric (sliced)

200g red chillies (sliced)

20g red bird’s eye chillies (diced)

1 lemongrass (white part only)

10g galangal (sliced)

Seasonings:

4 tbsp sugar

¼ tsp salt

Preparation Instructions:

  1. Heat up cooking oil in wok, add in ikan bilis, deep-fry over medium heat until golden brown. Dish up and drain. Set aside.
  2. Keep hot oil in the wok to saute pounded ingredients C over low heat until fragrant. Add in tamarind water and seasoning, mix well and bring to boil.
  3. Add the sliced big onion and fried ikan bilis, stir-fry briskly until well combined. Dish up and serve.
