Fried Chicken Fillet with Salted Egg Yolk


460g skinless & boneless chicken breast (cut into strips)

2 tbsp unsalted butter

2 nos salted egg yolk (steamed and mashed)

2 tbsp chopped garlic

2 sprigs curry leaves (discard stems)

3 red bird’s eye chillies (diced)

Adequate cooking oil


1 large egg

½ tsp salt

1 tsp sugar

1 tsp Chinese cooking wine

1 tbsp tapioca starch

3 tbsp corn starch


110ml evaporated milk

½ tsp salt

1 tbsp sugar

Preparation Instructions:

  1. Marinate the chicken strips with marinade ingredients and set aside.
  2. Heat up some cooking oil in a non-stick skillet, add in marinated chicken strips and pan-fry until golden brown. Remove and set aside.
  3. Remove the remaining cooking oil, add in unsalted butter, once the butter melted, add in salted egg yolk, saute until fragrant.
  4. Add in chopped garlic, curry leaves and bird’s eye chillies. Saute until fragrant.
  5. Add in seasonings and bring to a boil.
  6. Add in fried chicken fillet, toss until the chicken fillet absorbed most of the sauce.
  7. Dish out and serve.
