Ayam Encik Cabin (Encik Cabin Fried Chicken)

Tested Recipe with Slight Adjustment Adapted from Peranakan Cuisine “Baba Nyonya Culture Dishes

Ayam Encik Cabin (Encik Cabin Fried Chicken)

Ingredients:

800g chicken pieces

Marinade:

50g red shallots (pounded)

2cm young ginger (pounded)

1 tbsp chilli powder

1 tsp coriander powder

1 tsp turmeric powder

½ tsp cinnamon powder

½ tsp cumin powder

1 tsp belacan powder

50ml water

3 tbsp cooking oil

Seasoning:

1 ½ tsp salt

1 tsp crushed black pepper

150ml thick coconut milk

Preparation Instructions:

  1. Wash and clean chicken, drain well, and mix with marinade and seasoning.
  2. Marinate the chicken pieces for at least 2 hours or overnight in the refrigerator.
  3. Heat up oil for deep-frying, put in marinated chicken, deep-fry over medium heat until cooked and golden in colour. Dish out and drain. Serve hot.
