1 no x 340g bitter gourd (deseeded and sliced)
4 shallot (peeled and sliced)
2 cloves garlic (peeled and sliced)
2 red chillies (sliced)
20g dried anchovies (rinsed and drained)
2 tbsp soy bean paste
¼ cup water
2 tbsp cooking oil
¼ tsp salt
¼ tsp sugar
- Heat up a non-stick skillet with 2 tbsp of cooking oil. Saute the sliced shallot, garlic, red chillies and dried anchovies until fragrant.
- Add in soy bean paste and water and bring to a boil.
- Add in sliced bitter gourd and salt. Stir to combine and continue to simmer until just cooked.
- Dish out and serve.
