Tested Recipe Adapted from Peranakan Cuisine “Baba Nyonya Culture Dishes”

Nyonya Pork Liver Roll

Ingredients A:

150g pork liver (striped)

200g pork belly (chopped)

150g shelled prawns

Ingredients B:

½ egg

1 tbsp chopped spring onion

1 tbsp chopped coriander

½ tbsp chopped garlic

½ tbsp chopped shallots

1 ½ tbsp tapioca flour

Ingredients C:

Some caul lining

Some tapioca flour


2 tbsp caster sugar

½ tsp salt

1 tsp ground white pepper

1 tsp cekur powder

1 tsp coriander powder

Preparation Instructions:

  1. Combine all ingredients A with B and the seasoning, mix well and marinate for 1-2 hours.
  2. Rinse the caul lining and drain. Then, cut into 7×8 inches.
  3. Lay a piece of caul lining on a work surface, and dust with a little tapioca flour onto caul lining.
  4. On the caul lining, spoon some of stuffing mixture along one edge. Fold in the sides and roll up. Roll again to make 12cm sausage shape and seal.
  5. In a preheated steamer, and steam the rolls for 10-15 minutes over high heat till cooked. Dish u and leave to cool.
  6. Heat oil for deep-frying, put in rolls and deep-fry over low-heat until golden brown. Dish out and drain. Sectioned and serve hot.
