420g lotus root (peeled and sliced into pieces)
80g groundnuts (rinsed and drained)
½ chicken (cut into pieces)
20g dried squid head (rinsed and cut into pieces)
10 red dates (pitted)
1 tsp salt
- Add 2500ml of water into a pot and bring to a boil.
- Add in lotus root, groundnuts, chicken, dried squid head and red dates and bring to a boil again.
- Turn heat to low and continue to simmer for 1 ½ hour.
- Season with salt.
- Dish out and serve.
