Marble Butter Cake


Egg yolk batter:

125g unsalted butter (soften at room temperature)

50g caster sugar

2 egg yolks

60ml full cream milk

½ tsp pure vanilla extract

140g cake flour

1 tsp baking powder

½ tsp salt

5g cocoa powder


2 egg whites

50g caster sugar

Preparation Instructions:

  1. In a bowl, add in egg whites and caster sugar, using an electric mixer, beat until stiff peaks. Set aside.
  2. In another bowl, add in soften unsalted butter and caster sugar, using an electric mixer, beat until combined.
  3. Add in egg yolks, beat until combined.
  4. Add in full cream milk, beat until combined.
  5. Add in pure vanilla extract, beat until combined.
  6. Add in cake flour, baking powder and salt, beat until combined.
  7. Fold in one-third of the egg whites into the yolk batter at a time. Divide the batter into two parts.
  8. Stir in cocoa powder into one of them. Pour in the two parts of batter into a pre-greased 10×4 ½-inch loaf pan with baking silicone mat at the bottom alternatively. Use a bamboo skewer to stir the batter lightly.
  9. Bake at 180C for 45 minutes or until toothpick inserted comes out clean.
  10. Remove from oven and leave to cool completely before slicing.
