Chicken Soup with Corn, Cabbage, Carrot & Shiitake Mushroom

Ingredients:

½ chicken (cut into pieces)

1 pc corn (cut into chunks)

220g cabbage (cut into pieces)

1 carrot (peeled and cut into chunks)

150g fresh shiitake mushroom (separate the stem and caps)

1 tsp white peppercorn (crushed)

2500ml water

Seasoning:

1 tsp salt

Preparation Instructions:

  1. Add 2500ml of water into a pot and bring to a boil.
  2. Add in chicken pieces, corn, carrot, shiitake mushroom stems and crushed white peppercorn. Bring to a boil again.
  3. Turn heat to low and continue to simmer for 1 hour.
  4. Add in cabbage and shiitake mushroom caps. Simmer for 5 minutes.
  5. Season with salt.
  6. Dish out and serve.
