Hairy Gourd Soup with Chestnut, Mushroom, Carrot & Groundnuts

Ingredients:

1 no x 580g hairy gourd (peeled and cut into chunks)

52g dried chestnut (soaked overnight and use a toothpick to remove the membrane)

32g dried mushroom

1 carrot (peeled and cut into chunks)

40g groundnuts (soaked overnight)

2 slices young ginger

2500ml water

Seasoning:

1 tsp salt

Preparation Instructions:

  1. Add 2500ml of water into a pot. Bring to a boil.
  2. Add in hairy gourd, chestnut, mushroom, carrot, groundnuts and young ginger. Bring to a boil again.
  3. Turn heat to low and continue to simmer for 1 hour.
  4. Season with salt.
  5. Dish out and serve.
