Fried Kway Teow

Ingredients:

250g kway teow

70g bean sprout (cleaned)

30g chive (sectioned)

200g shrimps (shelled, deveined with tail intact)

1 tbsp chopped garlic

2 large eggs (lightly beaten)

4 tbsp cooking oil (divided)

Seasonings: (mixed well)

2 tsp chilli paste

2 tsp light soy sauce

1 tsp oyster sauce

½ tsp dark soy sauce

¼ tsp salt

¼ tsp sugar

1/8 tsp ground white pepper

1 tsp water

Preparation Instructions:

  1. Heat up a non-stick skillet with 2 tbsp of cooking oil. Add in beaten eggs, stir-fry until half-cooked. Remove and set aside.
  2. Add in shrimps, stir-fry until almost cooked. Remove and set aside.
  3. Add in 2 more tbsp of cooking oil. Saute chopped garlic until fragrant.
  4. Add in kway teow and seasonings. Stir to combine.
  5. Add in bean sprout and chive. Stir-fry evenly.
  6. Add in briefly fried eggs and shrimps. Toss well.
  7. Dish out and serve.
