Tested Recipe with Slight Adjustment Adapted from An Inspiring Collection of Hakka Foods
140g black beans
700g pig’s trotter (cut into pieces)
4 slices old ginger
½ tbsp sesame oil
1 tsp salt
- Rinse black beans, drained, stir-fry in a preheated wok without oil over a low heat until fragrant. Add in sesame oil and ginger, toss well until golden brown, dish up.
- Rinse pig’s trotter pieces, and blanch in the boiling water, remove, drain well.
- Pour water in a soup pot, add in pig’s trotter pieces and black beans, bring to boil. Covered, lower the heat, simmer for 1 ½ – 2 hours, add in seasoning, mix well. Serve hot.
