Zha Jiang Noodles (Beijing Noodles with Minced Pork)

Tested Recipe with Slight Adjustment Adapted from Madam Choong’s Noodle Secrets



Northern Chinese Homemade Noodles: (yield 600g)

400g all-purpose flour

40g rice flour

½ tsp salt

2 egg white

125ml water


30g ginger (scrapped and minced)

300g minced pork belly

1 carrot (peeled and shredded)

1 cucumber (shredded)

2 cups water


120g shallot

40g garlic

Sichuan Pepper Oil:

1 stalk spring onion (cut into 2-inch length)

5 slices ginger

1 tsp Sichuan peppercorn (washed and drained)


¼ tsp salt

¼ tsp ground white pepper

1 tbsp Chinese cooking wine


1 tbsp peanut butter

1 tbsp hot bean paste

½ tbsp light soy sauce

1 tsp dark soy sauce

1 tbsp sugar

1 tsp salt

1 tbsp Chinese cooking wine

1 tsp sesame oil

¼ tsp ground white pepper

Preparation Instructions:

  1. Northern Chinese Homemade Noodles:
  • Sift all-purpose flour and rice flour together, set aside. Combine salt and egg white with water, mix until salt dissolves.
  • Pour egg mixture gradually into the sifted flours and mix till granulated or mix into flakes. Pour on t able and knead to form a dough. Cover with a wet cloth clockwise while kneading) and press the dough flat.
  • Roll the dough using noodle machine and cut into noodles. Dust with some corn flour to prevent the dough from sticking together.
  1. Combine minced pork belly with the marinade and marinate for 15 minutes. Set aside.
  2. Sliced shallot and coat with some tapioca starch, deep-fry till golden brown, keep fried shallot oil for later use. Chop the garlic, saute till fragrant and golden brown, set aside.
  3. Dilute peanut butter with hot water, set aside.
  4. Heat up oil in wok, saute minced ginger, add in minced pork and stir-fry till the meat turns pale and loosen.
  5. Add in 2 cups of water, seasonings and deep-fried ingredients B, bring to a boil over high heat. Reduce to low heat and cook till the sauce thickens. Dish out.
  6. Heat up 4 tbsp of oil in wok again, saute Sichuan pepper oil ingredients, strain and discard the dregs. Pour hot oil in the cooked minced pork mixture.
  7. Bring water to a boil over high heat, put noodles into boiling water, cook for 1 minute, remove and rinse, drain. Mix well with some shallot oil. Place in serving platter.
  8. Pour minced meat sauce over and arrange with shredded carrot and cucumber. Serve.
