Hong Kong Style Wok-Fried Fish Fillet

Tested Recipe with Slight Adjustment Adapted from Madam Wong’s Confinement Dishes


Ingredients A:

380g grouper fish fillet (cut into pieces)

Ingredients B:

60g minced garlic

180g minced old ginger

120g minced shallot


2 tbsp old ginger juice

½ tsp salt

1 tsp chinese cooking wine

1 tsp seafood curry powder


1 tsp sugar

¼ tsp salt

½ tsp chicken seasoning powder

Preparation Instructions:

  1. Mix fish fillet with marinade and set aside for 15 minutes. Coat fillet with some corn flour and pan-fry in hot oil till golden brown. Remove.
  2. Heat up 3 tbsp of oil in a wok. Add in ingredients B and stir-fry over low heat till golden brown. Remove and drain away excess oil.
  3. Keep ½ tbsp of oil in a wok and stir-fry fried fish and seasonings evenly.
  4. Add in fried ingredients B and mix well.
