Fresh Prawn Wonton Noodle Soup

Tested Recipe with Slight Adjustment Adapted from Madam Choong’s Noodle Secrets

 

Ingredients A: (Soup)

10 cups water

350g pork bone (scalded, rinsed and drained)

30g dried baby shrimp (washed and sautéed)

30g dried flounder (grilled till crispy)

20g young ginger (washed and smashed)

¼ piece luo han guo / momordica fruit (washed)

Seasonings:

1 tsp salt

¾ tsp sugar

Ingredients B: (Wonton Filling)

300g prawn (shelled and deveined)

100g minced lean pork

¾ tsp salt

10g tapioca starch

1 ½ tsp sugar

½ tsp light soy sauce

A pinch ground white pepper

A dash sesame oil

8g dried flounder powder

1 egg white

Marinade:

35g tapioca starch

1 tsp salt

Ingredients C:

5 pieces wonton noodles (loosen)

100g wonton skin

150g baby choy sum (sectioned, washed and scalded till cooked)

Garnishing:

A pinch ground white pepper

A dash sesame oil

1 stalk spring onion (rinsed, drained and chopped)

Preparation Instructions:

  1. Soup: Bring 10 cups of water to a boil over high heat, add in remaining ingredients A and bring to a boil again. Reduce to low heat and simmer for 2 ½ hours till the soup is reduced to about 5 cups. Strain the soup and add in seasonings, bring to boil again. Set aside.
  2. Wonton: Rub shelled prawns with a little salt, wash, drain and combine with marinade, set aside for 60 minutes. Rinse and drain thoroughly.
  3. Combine prawns, minced pork, salt and starch, knead till sticky. Add in sugar and light soy sauce, slash the mixture while kneading to form an elastic paste. Add in ground white pepper, sesame oil and flounder powder, mix well.
  4. Wrap some filling mixture with wonton skin and pinch to form a wonton shape. Set aside.
  5. Fill a wok with water and bring to a boil, scald wonton noodles in boiling water for about 1 to 2 minutes, remove and rinse with cold water. Return to boiling water and scald for a while.
  6. Remove the noodles and drain, place into serving bowls, arrange scalded baby choy sum on top.
  7. Drop the wonton into boiling water, scald for about 2 to 3 minutes till cooked. Remove and place on top of noodles. Pour hot soup over. Sprinkle garnishing ingredients over, serve hot.
