Roti Jala (Malaysian Lacy Pancakes)

Ingredients:

2 large eggs

2 cups all-purpose flour

1 ½ cup thick coconut milk

1 ¾ cup water

1 tsp turmeric powder

½ tsp salt

2 tbsp cooking oil

Preparation Instructions:

  1. Add all ingredients into a food processor. Pulse until combine. Transfer the mixture into a bowl.
  2. Heat up an 8-inch non-stick skillet on low heat.
  3. Fill the roti jala mould with batter and move in a circular motion to form a net pattern.
  4. Pan-fry till set. Remove and fold.
  5. Repeat till mixture is used up.
  6. Serve with kari ayam.
