Sambal Prawns with Stink Beans (Sambal Udang Petai)

Tested Recipe with Slight Adjustment Adapted from Ricky Ng



Ingredients A:

400g medium prawns (shelled, deveined with the tail intact)

175g stink beans (petai) (halved)

5 tbsp cooking oil

Ingredients B (Blended):

120g shallot (peeled)

20g garlic (peeled)

1 tbsp toasted belacan

15 dried chillies (soaked)

20g young ginger

Ingredients C:

2 tbsp tamarind juice

1 tbsp tomato sauce

1 tbsp sugar

½ tsp salt

3 tbsp water

Preparation Instructions:

  1. Stir-fry ingredients B with oil till the red oil is separated.
  2. Add in prawns and stink beans and stir-fry till the prawns are cooked and stink beans turn soft.
  3. Add in ingredients C and stir-fry for a while.
  4. Dish out and serve.
