Ayam Masak Berlada



750g chicken pieces

1 big onion (cut into ring)

2 tomatoes (diced)

1 pc tamarind slice

4 tbsp cooking oil


½ tsp turmeric powder

½ tsp salt

Blended ingredients:

10 red chillies

2 red bird’s eye chillies

8 shallots (peeled)

6 cloves garlic (peeled)

2-inch young ginger


2 tbsp sugar

½ tsp salt

Preparation Instructions:

  1. Rinse, drained and pat-dry the chicken pieces.
  2. Marinate the chicken pieces with turmeric powder and salt. Set aside.
  3. Heat up a non-stick skillet with 4 tbsp of cooking oil. Pan-fry the marinated chicken pieces until lightly golden. Remove, drained and set aside.
  4. Use the remaining oil to saute the blended ingredients until fragrant.
  5. Add in diced tomatoes, tamarind slice and seasonings. Stir to combine.
  6. Add in pan-fried chicken pieces and onion ring. Stir to combine and continue to simmer until the chicken pieces are fully cooked and onion ring turn soft.
  7. Dish out and serve.
