Fried Chicken & Onion

Ingredients:

3 chicken whole legs (970g) (chopped into pieces)

1 yellow onion (cut into rings)

Adequate cooking oil for deep-frying

Marinade:

1 cup full cream milk

1 tbsp apple cider vinegar

¼ tsp onion powder

¼ tsp garlic powder

¼ tsp cayenne pepper

½ tsp sriracha hot chilli sauce

1 tsp salt

Coating:

1 cup all-purpose flour

¼ tsp ground black pepper

¼ tsp onion powder

¼ tsp garlic powder

¼ tsp cayenne pepper

½ tsp salt

Garnishing:

1 tsp chopped parsley

Preparation Instructions:

  1. In a mixing bowl, add in full cream milk and apple cider vinegar. Set aside for 5 minutes to make buttermilk.
  2. Add in onion powder, garlic powder, cayenne pepper, sriracha hot chilli sauce and salt. Stir to combine.
  3. Add in chicken pieces and onion rings. Mix to combine and set aside for 30 minutes.
  4. In a large zipper bag, combine all-purpose flour, ground black pepper, onion powder, garlic powder, cayenne pepper and salt.
  5. Drain chicken and onion rings. Shake them in zipper bag until coated with flour mixture.
  6. Heat up a non-stick skillet with adequate cooking oil for deep-frying. Deep-fry the chicken pieces until golden brown and fully cooked. Remove and drained.
  7. Deep-fry the onion rings until golden brown. Remove and drained.
  8. Transfer the chicken pieces and onion rings into a serving bowl, garnish with chopped parsley and serve.
