Kimchi Guk (Kimchi Soup)

Tested Recipe with Slight Adjustment Adapted from www.maangchi.com

 

 

Ingredients:

2 cups chopped kimchi

225g pork belly (cut into bite-sized pieces)

2 tbsp gochujang (Korean hot pepper paste)

1 tsp sugar

5 cups water

2 stalks spring onion (sliced)

1 packet x 300g tofu (sliced)

Preparation Instructions:

  1. Combine the kimchi, gochujang, kimchi juice, pork belly, and sugar in a heavy bottomed pot.
  2. Add water and bring to a boil over high heat and cook for 30 minutes.
  3. Add tofu and bring to a boil again.
  4. Add spring onion and remove from the heat.
  5. Serve hot with rice.
