Tested Recipe with Slight Adjustment Adapted from www.maangchi.com
2 cups chopped kimchi
225g pork belly (cut into bite-sized pieces)
2 tbsp gochujang (Korean hot pepper paste)
1 tsp sugar
5 cups water
2 stalks spring onion (sliced)
1 packet x 300g tofu (sliced)
- Combine the kimchi, gochujang, kimchi juice, pork belly, and sugar in a heavy bottomed pot.
- Add water and bring to a boil over high heat and cook for 30 minutes.
- Add tofu and bring to a boil again.
- Add spring onion and remove from the heat.
- Serve hot with rice.
