Bibim Guksu (Korean Spicy Cold Noodles)


Ingredients: (2 servings)

240g somyeon (thin noodles)

½ cup cucumber strips

½ cup alfalfa sprouts

½ cup sliced Batavia lettuce

½ cup sliced red cabbage

½ cup thinly sliced kimchi

1 soft-boiled egg (halved)

1 tsp toasted white sesame seeds


3 tbsp gochujang (Korean hot pepper paste)

1 tbsp gochugaru (Korean hot pepper flakes)

1 tsp mustard powder

2 tbsp sugar

2 tbsp rice vinegar

1 tbsp light soy sauce

2 tbsp orange juice

1 tsp minced garlic

1 tbsp extra virgin sesame oil

1 tsp toasted white sesame seeds

Preparation Instructions:

  1. Mix all sauce ingredients and keep it cool in the fridge.
  2. Prepare the vegetables and chill them in the fridge.
  3. Bring a pot of water to a boil. Add in somyeon and simmer for 3 minutes. Drain quickly and shock in cold water to stop cooking. Drain and rinse in icy cold water until the noodles are very cold. Place the noodles in a colander to drain.
  4. Place noodles in a mixing bowl, add in sauce. Put on a disposable glove and toss well. Divide the noodles into 2 portions and place it in the middle of 2 separate individual stainless steel serving bowl.
  5. Nicely arrange the cold vegetables over the noodles. Top with soft boiled egg and garnish with toasted white sesame seeds. Serve.
