Hongeojjim (Steamed Skate Fish)



850g skate fish (cleaned and cut into half)

½ tsp salt

Sauce: (mixed well)

1 spring onion (chopped)

1 tbsp chopped garlic

1 tbsp chopped young ginger

3 tbsp light soy sauce

2 tbsp mirin

2 tbsp lemon juice

1 tbsp caster sugar

1 tsp gochugaru (Korean hot pepper flakes)

1 tbsp extra virgin sesame oil

1 tsp toasted white sesame seeds

1/8 tsp ground white pepper


½ lemon (sliced)

1 stalk spring onion (shredded)

Preparation Instructions:

  1. Marinate the skate fish with ½ tsp of salt and transfer onto a steaming plate.
  2. Steam at preheated steamer for 8 minutes. Remove and discard the excessive water.
  3. Pour the sauce over the fish and continue to steam for another 2 more minutes.
  4. Remove from steamer, garnish with lemon slices and shredded spring onion.
  5. Serve hot with rice.
