Lo Por Paeng (Wife Biscuits)

Ingredients:

Filling:

120g candied winter melon (finely chopped)

5ml canola oil

15g caster sugar

40g koh fun

50ml water

Oil dough:

80g all-purpose flour

60g shortening

Water dough:

100g all-purpose flour

40g shortening

50ml water

Glazing:

1 egg yolk

Topping:

2 tbsp white sesame seeds

Preparation Instructions:

  1. Filling:
  • Add the caster sugar to the chopped winter melon, mix in the canola oil, water and mix lightly together.
  • Add in koh fun and mix to form a paste.
  • Divide paste into 8 balls. Set aside.
  1. Oil dough:
  • Sieve the all-purpose flour into a mixing bowl, cut and rub in the shortening. Mix till well combined.
  • Divide dough into 8 portions.
  1. Water dough:
  • Sieve the all-purpose flour into a mixing bowl, cut and rub in the shortening. Gradually add in the water, mix until well combined.
  • Divide dough into 8 portions.
  1. Assembling the biscuits:
  • Roll out a piece of water dough, place a piece of oil dough on it, wrap it up into a ball.
  • Flatten out the dough and roll up like a swiss roll, longitudinally.
  • Flatten and roll up again like a swiss roll. Flatten to a disc and place a ball of paste and wrap up into a ball.
  • Roll out and flatten the ball of dough slightly.
  • Apply egg glaze and cut two slits on the cake.
  • Sprinkle with some white sesame seeds.
  • Bake in preheated oven at 180C for 20 minutes or until golden brown.
  • Let cool on wire rack before serving.
