Honey Mustard Chicken with Potatoes & French Beans

Ingredients:

800g chicken drumstick (rinsed and drained)

420g potatoes (peeled and cut into chunks)

1 carrot (cut into chunks)

160g French beans (trimmed both ends and halved)

1 tbsp chopped garlic

2 tbsp cooking oil

Marinade:

1 tsp garlic powder

½ tsp salt

¼ tsp coarsely ground black pepper

Seasonings: (mixed well)

2 tbsp wholegrain mustard

2 tbsp Dijon mustard

¼ cup honey

¼ tsp coarsely ground black pepper

¼ tsp salt

½ cup water

Preparation Instructions:

  1. Marinate the chicken drumstick with garlic powder, salt and coarsely ground black pepper. Set aside.
  2. Heat up a non-stick skillet with 2 tbsp of cooking oil on medium high heat. Add in the marinated chicken drumstick. Covered and pan-fry until all sides are brown. Turn heat to low and continue to cover and cook until the chicken are cooked through. Remove and set aside.
  3. Use the remaining oil to saute the potatoes and carrot. Covered, stirring occasionally until the potatoes and carrot are cooked. Remove and set aside.
  4. Use the remaining oil to lightly saute the French beans. Remove and set aside.
  5. Use the remaining oil to saute the chopped garlic until fragrant.
  6. Add in seasonings, chicken drumstick, potatoes and carrot and bring to a boil. Covered, turn to medium high heat and continue to simmer until the sauce has become thicken.
  7. Add in the sautéed French beans, stir to combine.
  8. Serve.
