Cashew Nut Cookies

Tested Recipe with Slight Adjustment Adapted from Patricia Lee’s Delicious Nyonya Kueh & Desserts



125g unsalted butter (soften at room temperature)

90g icing sugar

200g all-purpose flour

½ tsp baking powder

90g ground cashew nuts

½ egg yolk

½ tsp pure vanilla extract

75g whole cashew nuts for garnishing

Egg wash:

½ egg yolk

Preparation Instructions:

  1. Preheat oven at 160C.
  2. Sift all-purpose flour and baking powder together.
  3. Cream unsalted butter and icing sugar together. Add in egg yolk and pure vanilla extract.
  4. Add in flour mixture and ground cashew nuts. Mix well until it forms dough.
  5. Roll dough to ¼-inch thickness and cut into heart shape using cookie cutter.
  6. Brush with egg wash and decorate cookies with whole cashew nuts.
  7. Bake at 160C for 30 minutes or till golden brown.
  8. Leave to cool completely before storing in an air-tight container.
