Kimchi Bokkeumbap (Kimchi Fried Rice)



Ingredients: (serves 3)

3 cups cooked short grain rice

3 slices streaky bacon (cut into strips)

1 cup chopped kimchi

¼ cup kimchi juice

½ cup diced carrot

¼ cup chopped onion

1 tbsp light soy sauce

1 tbsp gochujang (Korean hot pepper paste)

1 tbsp cooking oil

½ tbsp extra virgin sesame oil

¼ tsp ground white pepper

¼ tsp salt

1 tsp toasted white sesame seeds


3 sunny side up egg

1 stalk spring onion (chopped)

1 tsp toasted white sesame seeds

Preparation Instructions:

  1. Heat up a large non-stick skillet with 1 tbsp of cooking oil. Add in the bacon strips. Saute until fragrant.
  2. Add in chopped kimchi, kimchi juice, diced carrot, chopped onion, light soy sauce and gochujang. Saute until fragrant.
  3. Add in cooked short grain rice, constantly stirring until well combined.
  4. Season with extra virgin sesame oil, ground white pepper and salt. Stir to combine.
  5. Add in toasted white sesame seeds. Toss well.
  6. Dish out to three separate serving bowl. Top with sunny side up egg, chopped spring onion and toasted white sesame seeds. Serve.
