3 cups shredded poached chicken breast
1 ½ cups thinly sliced cucumber
¼ cup chopped onion
½ cup dried cranberry
½ cup slivered almonds
1 tbsp unsalted butter
½ cup mayonnaise
1 tbsp lemon juice
1 ½ tbsp honey
½ tsp salt
¼ tsp coarsely ground black pepper
- Heat up a saucepan with 1 tbsp of unsalted butter, add in slivered almonds, constantly stirring until lightly brown. Remove and add into a mixing bowl.
- Add in shredded poached chicken breast, thinly sliced cucumber, dried cranberry and dressing ingredients. Gently toss to coat.
- Transfer to a serving bowl. Serve.
