Seaweed Soup with Minced Pork & Tofu

Ingredients:

14g seaweed (soaked in water until softened. Rinse thoroughly and drain well)

300g tofu (diced)

200g minced pork

1500ml water

Marinade:

1 tsp grated young ginger

1 tsp Chinese cooking wine

1 tsp light soy sauce

½ tsp caster sugar

¼ tsp ground white pepper

1 tsp extra virgin sesame oil

1 ½ tsp corn flour

Seasonings:

1 tbsp concentrated chicken stock

1 tsp salt

¼ tsp ground white pepper

Garnishing:

1 stalk spring onion (chopped)

Preparation Instructions:

  1. Mix the minced pork with marinade ingredients. Take a tbsp of mixture and shape into balls. Repeat for the remaining ingredients.
  2. Add 1500ml of water to a pot and bring to a boil.
  3. Add in meatballs and simmer until the meatballs float to the top.
  4. Add in seasonings and diced tofu, bring to a boil.
  5. Add in seaweed. Bring to a boil.
  6. Dish out, garnish with chopped spring onion and serve.
