950g chicken drumstick
6 tomatoes (cut into wedges)
3 big onion (sliced)
4 potatoes (cut into chunks)
2 carrot (cut into chunks)
½ tsp white peppercorns (crushed)
1 tbsp salt
1 stalk spring onion (chopped)
1 stalk Chinese parsley (chopped)
- Add 2500ml of water into a pot and bring to a boil.
- Add in chicken drumstick, big onion, carrot and crushed white peppercorns. Bring to a boil, turn heat to low and continue to simmer for 1 hour.
- Add in tomatoes and potatoes and continue to simmer for 30 minutes.
- Season with salt.
- Dish out, garnish with chopped spring onion and Chinese parsley.
- Serve hot.
