Chicken Soup with Tomato, Onion, Potato & Carrot

Ingredients:

950g chicken drumstick

6 tomatoes (cut into wedges)

3 big onion (sliced)

4 potatoes (cut into chunks)

2 carrot (cut into chunks)

½ tsp white peppercorns (crushed)

2500ml water

Seasoning:

1 tbsp salt

Garnishing:

1 stalk spring onion (chopped)

1 stalk Chinese parsley (chopped)

Preparation Instructions:

  1. Add 2500ml of water into a pot and bring to a boil.
  2. Add in chicken drumstick, big onion, carrot and crushed white peppercorns. Bring to a boil, turn heat to low and continue to simmer for 1 hour.
  3. Add in tomatoes and potatoes and continue to simmer for 30 minutes.
  4. Season with salt.
  5. Dish out, garnish with chopped spring onion and Chinese parsley.
  6. Serve hot.
