Fried Chicken in Plum Sauce

Tested Recipe with Slight Adjustment Adapted from) Authentic Recipes from Province of Fu Zhou



½ chicken (about 1kg) (cleaned)

½ tsp salt

1 tbsp light soy sauce

Adequate cooking oil for deep-frying


¼ tsp ground white pepper

¼ tsp five spice powder

1 tsp chopped garlic


1 tbsp cooking oil

1 tbsp chopped garlic

3 tbsp plum sauce

150ml water

¼ tsp salt

½ tsp sugar

1 tbsp chopped chillies

1 tbsp chopped coriander leaves

Preparation Instructions:

  1. Rub salt and light soy sauce all over the chicken, season for 30 minutes. Rub marinade over the chicken cavity and season for another 30 minutes.
  2. Deep-fry marinated chicken in hot oil (skin facing down) over medium low heat for 25-30 minutes until golden brown and cooked. Dish and drain. Cut into pieces and arrange onto a serving platter.
  3. Sauce: Heat up oil and saute chopped garlic until aromatic. Add in the remaining ingredients and bring to boil. Remove from heat.
  4. Pour the sauce over the chicken and serve.
