Chicken Cashew Stir-Fry


250g boneless & skinless chicken breast (cut into bite sized pieces)

100g roasted cashew

2 stick celery (peeled and sliced diagonally)

6 pieces fresh young corn (roughly chopped)

1/3 carrot (peeled and julienned)

1 tsp chopped garlic

1 small onion (sliced)

3 tbsp cooking oil


1 tsp light soy sauce

½ tsp caster sugar

1 tsp corn starch

¼ tsp ground white pepper

1 tsp cooking oil

Seasoning Sauce: (mixed well)

1 tsp chicken seasoning powder

2 tsp light soy sauce

1 tsp Chinese cooking wine

½ tsp caster sugar

1 tsp corn starch

3 tbsp water

Preparation Instructions:

  1. Marinate the chicken pieces with marinade ingredients and set aside for 30 minutes.
  2. Heat up a non-stick skillet with 2 tbsp of cooking oil.
  3. Sauté the marinated chicken pieces until brown on all sides. Remove and set aside.
  4. Add in 1 tbsp of cooking oil to the skillet.
  5. Sauté the chopped garlic, sliced onion, celery and carrot until fragrant.
  6. Add in fresh young corn, lightly sautéed.
  7. Add in chicken pieces, stir-fry for 2 minutes.
  8. Add in seasoning sauce. Stir to combine.
  9. Add in roasted cashew. Toss well.
  10. Dish out and serve with steamed rice.
