Cashew Chicken


360g boneless & skinless chicken breast (cut into pieces)

100g roasted cashew nut

½ red bell pepper (cut into wedges)

½ green bell pepper (cut into wedges)

1 red onion (cut into wedges)

1 tbsp chopped garlic

1 tbsp chopped young ginger

2 tbsp cooking oil


1 tbsp light soy sauce

½ tsp sugar

¼ tsp ground white pepper

1 tbsp corn starch


1 tbsp light soy sauce

1 tbsp oyster sauce

1 tbsp Chinese cooking wine

1 tsp extra virgin sesame oil

2 tsp sugar

Preparation Instructions:

  1. Marinate the chicken pieces with marinade ingredients and set aside for 15 minutes.
  2. Heat up a non-stick skillet with 2 tbsp of cooking oil. Sauté the marinated chicken pieces until brown on all sides. Remove and set aside.
  3. Use the remaining oil in the skillet to sauté the red onion, chopped garlic and young ginger until fragrant.
  4. Add in the chicken pieces, red and green bell pepper and seasonings. Do a few quick stir.
  5. Add in roasted cashew nut. Toss well.
  6. Dish out and serve with steamed rice.
