Crispy Sesame Scallion Crepe

Ingredients:

1 cup all-purpose flour + more for dusting

½ cup water

1 tbsp extra virgin coconut oil

¼ tsp salt

¼ tsp five spice powder

3 tbsp toasted white sesame seeds

½ cup chopped scallion

Adequate cooking oil for pan-frying

Preparation Instructions:

  1. Add 1 cup of all-purpose flour into a mixing bowl and set aside.
  2. Use a sauce pan to heat up the water to 70C. Gradually pour the water into the all-purpose flour and use a pair of chopstick to stir to combine. Knead into a dough. Cover and set aside for 15 minutes.
  3. Use pestle and mortar to coarsely ground the toasted white sesame seeds.
  4. Transfer the dough onto a lightly flour surface. Roll into a 9 ½ x 9 ½-inch sheet.
  5. Brush the extra virgin coconut oil on top. Sprinkle with salt, follow by five spice powder, coarsely ground toasted white sesame seeds and chopped scallion.
  6. Roll it up tightly and divide into 6 equal portions. Press to seal both sides of the openings. Use palm to press into a disc, sprinkle with some all-purpose flour. Roll it into a thin circle.
  7. Heat up a non-stick skillet with adequate cooking oil for pan-frying. Pan-fry the crepes on medium high heat until crispy and golden brown.
  8. Remove and drained on paper towel to absorb excessive oil.
