Ingredients:
1 pc x 300g salmon fillet
1 tbsp cooking oil
Marinade for salmon fillet:
¼ tsp coarsely ground black pepper
¼ tsp salt
Strawberry Salsa:
5 nos strawberry (trimmed and diced)
1 no shallot (peeled and chopped)
1 stalk cilantro (chopped)
2 tbsp freshly squeeze lemon juice
1 tsp granulated white sugar
¼ tsp salt
Preparation Instructions:
- In a mixing bowl, add in fresh lemon juice, sugar and salt. Stir until sugar and salt dissolved. Add in the diced strawberry, chopped shallots and cilantro. Stir to combine and set aside.
- Marinate the salmon fillet with coarsely ground black pepper and salt.
- Apply some cooking oil on both sides.
- Grill at preheated oven at 180C for 20 minutes or until fish begins to flake.
- Remove and transfer to a serving platter. Top with strawberry salsa and serve immediately.
