Vietnamese Chicken with Kaffir Lime Leaves

Tested Recipe with Slight Adjustment Adapted from Jamie Jong’s Claypot Delights




400g chicken (cut into pieces)

10 shallots (sliced)

2 tbsp chopped garlic

5 pcs kaffir lime leaves (shredded)

2 red chillies (seeded, sliced)

2 tbsp fish sauce

1 tbsp thick soy sauce

1 tbsp sugar

3 tbsp oil

1 cup water

Preparation Instructions:

  1. Heat oil in claypot, fry shallots and garlic until fragrant, add in chicken and fry until lightly browned on all sides.
  2. Add in chillies, kaffir lime leaves, fish sauce, thick soya sauce, sugar and water. Bring to the boil, reduce heat and simmer until chicken is tender and gravy is thick.
