Tested Recipe with Slight Adjustment Adapted from Jamie Jong’s Claypot Delights
400g chicken (cut into pieces)
10 shallots (sliced)
2 tbsp chopped garlic
5 pcs kaffir lime leaves (shredded)
2 red chillies (seeded, sliced)
2 tbsp fish sauce
1 tbsp thick soy sauce
1 tbsp sugar
3 tbsp oil
1 cup water
- Heat oil in claypot, fry shallots and garlic until fragrant, add in chicken and fry until lightly browned on all sides.
- Add in chillies, kaffir lime leaves, fish sauce, thick soya sauce, sugar and water. Bring to the boil, reduce heat and simmer until chicken is tender and gravy is thick.
