Whole Wheat Banana Walnut Muffins

Ingredients: (makes 12 muffins)

¾ cup wholemeal flour

¾ cup all-purpose flour

1 ½ tsp baking soda

½ tsp salt

1/8 tsp ground nutmeg

1/8 tsp ground cinnamon

1 ¼ cup mashed banana

1 1/3 cup toasted walnut (roughly chopped)

115g unsalted butter (melted)

1 tsp vanilla extract

½ cup caster sugar

¼ cup dark brown sugar

¼ cup full cream milk

1 large egg

Preparation Instructions:

  1. Whisk wholemeal flour, all-purpose flour, baking soda, salt, ground nutmeg and ground cinnamon together in a mixing bowl. Set aside.
  2. In another mixing bowl, add mashed banana, melted salted butter, vanilla extract, caster sugar, dark brown sugar, full cream milk and egg. Stir until well combined.
  3. Add in dry ingredients. Stir until just combined.
  4. Fold in half of the chopped walnut.
  5. Scoop batter evenly into 12 muffin cups with paper liner.
  6. Sprinkle remaining of chopped walnut over top of muffins.
  7. Bake at 180C for 40 minutes or toothpick inserted into center comes out clean.
